Chicken Paillard

 One of my favorite summer dishes...chicken paillard with arugula, tomatoes, bocchini, and a creamy parm dressing
 Serve with our favorite chardonnay (Garden Creek) and you will have an amazing lunch....al fresco

An original....

Spice seared diver scallop with chicken liver mousse and a balsamic drizzle....made it up on the fly....and damn I am good sometimes.  :)

Steak Tartare

 Hand chopped steak tartare 
Served with a beautiful cab....great meal

Mothers Day Lunch

 Simple and delicious...pan seared sea bass with cucumber and tomato (farmers market)
Flaming some misted Chartreuse on top of the cocktail...giving it a great scent.... 

Fancy in the South

 Shrimp stuffed with tasso and a 5 pepper jelly.....
Smack yo mama good....

Beef Carpaccio

 One of the better meals I have made recently....beef carpaccio with truffled portabello fries
 Thinly shaved prime fillet with a bed of arugula and mustard sauce...so devine
The fries went fast.... :)

Ceviche

 Best ceviche outside of sitting ocean side in Mexico....citrus and spice really compliments the sweet shirmp
Served with what else....my famous margaritas.....

Caribbean Oxtails

 Had a craving for something rich, spicy, and delicious....made jerk rubbed slow cooked oxtails.  If you have never had a well prepared oxtail....you are missing out
Served with creamy whipped potatoes....

Mussels

 Mussels with a saffron cream sauce....pass the bread please

Just delicious....will let the pic do the talking....

Easter feast

 A special treat on Easter Sunday as I only make this once per year.  Crab casserole with loads of Gruyere...so delicious 
 Served with a very good Rose Champagne....
 Appetizer was my spice rubbed pork belly slow cooked in a chocolate stout.  I then pan seared individual servings and served....so good 
 Main course...herb rubbed bone in leg of lamb....
Lamb and a CDP to drink....mmmmmm

New Orleans Craving

 We were reminiscing about our New Orleans trip and had a craving for something delicious...made Mr. B's BBQ shrimp....I cannot tell you how good the melted heads made this dish....so rich and delicious...a decadent treat
Had Abita Mardi Gras beer with the meal....perfect of course

Mushrooms Duxelle

 Probably one of my favorite appetizers....mushrooms duxelle with toasted baguette slices 
Serve it with a good chardonnay or a Pinot

Christmas Dinner

 Started with some ice cold vodka and fresh shucked oysters (yes I did them myself) 
Next we had some bacon roasted nuts with my old fashioned's 
 For the main course we had cioppino, not as good as Tadich Grill....but pretty darn close.  :)
